One-Pan Lemon Herb Roasted Chicken Thighs
Roasted chicken thighs are one of the most forgiving and delicious proteins you can cook. This one-pan version means less cleanup and maximum flavor from the lemon herb marinade.
Ingredients
- 6 bone-in, skin-on chicken thighs
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh rosemary sprigs
Instructions
- Preheat oven to 425°F (220°C).
- Mix olive oil, garlic, lemon zest, lemon juice, oregano, thyme, paprika, salt and pepper.
- Pat chicken thighs dry and coat thoroughly with the marinade.
- Arrange skin-side up in a large oven-safe pan or baking dish.
- Add rosemary sprigs around the chicken.
- Roast 35-40 minutes until skin is golden and crispy and internal temperature reaches 165°F.
- Let rest 5 minutes before serving.
