Easy Black Bean Tacos – Vegetarian and Ready in 20 Minutes

These black bean tacos prove that vegetarian meals can be just as satisfying and flavorful as any meat dish. They come together in 20 minutes and are endlessly customizable.

Ingredients

  • 2 cans black beans, drained and rinsed
  • 8 small corn or flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt to taste
  • 1 cup shredded purple cabbage
  • 1 avocado, sliced
  • ½ cup salsa or pico de gallo
  • ¼ cup sour cream or Greek yogurt
  • Fresh cilantro and lime wedges

Instructions

  1. Heat black beans in a skillet over medium heat. Add cumin, chili powder, garlic powder and salt. Stir and cook 5 minutes.
  2. Lightly mash about half the beans with a fork for better texture.
  3. Warm tortillas in a dry skillet or directly over a gas flame.
  4. Assemble tacos: spoon beans onto tortillas, top with cabbage, avocado, salsa, and a drizzle of sour cream.
  5. Garnish with fresh cilantro and a squeeze of lime.
